Here is a dish that is a little on the exotic side for most of us in the US. Why not give it a try, it actually sounds delicious. When cooking the brisket there is two things to keep in mind. Cook it long, and cook it with the fat. Since the meat comes from the grainier forequarters of the steer, slow cooking is required to tenderize it.
Okay we’ll start with the ingredients. This will give you 8-10 servings:
2 onions, chopped
4 cloves garlic
1 tablespoon ground ginger
2 tablespoons vegetable oil
One 5-6 pound brisket
Salt and pepper to taste
2 apples, chopped (about 2 cups)
1 cup dried apricots, halved
1/2 cup dried cranberries
1 cup dried plums, pitted
12 cups apple juice
1-2 cups canned beef or chicken broth
Now lets prepare the brisket:
1. Preheat the oven to 350 degrees.
2. Brown the onions, garlic and ginger in the oil until the onions are golden. Then scatter the mixture in a roasting pan.
3. Season the brisket with salt and pepper and gently lay it on top of the onions. Add the apples, apricots, dried cranberries, dried plums and enough apple juice and beef or chicken broth to almost cover the brisket. Cover the roasting pan with a lid or aluminum foil and cook for 3 hours, basting occasionally.
4. Remove the brisket, cool, and refrigerate overnight.
5. Just before serving, reheat the oven to 350 degrees. While the brisket is still cold, skim off any fat that has accumulated on top of the juices, and slice off the excess fat from the meat. Slice the meat against the grain, place in a baking dish with the reserved juices, cover, and reheat for about a half hour. Remove brisket to a platter, surrounded by the fruits and the sauce. Now all you need is your side dishes and you’re ready to eat.

Poinsettia- the Christmas flower
There are number of flowers and herbs associated with Christmas like Mistletoe, Wreath,
Poinsettia. Of them , my favorite flora for Christmas decor is the last one, Poinsettia.
While the most common ones are the red Poinsettia with three to six blooms, there are other shapes, sizes and colors.
Lots of myths and stories are associated with this flower. These are actually native of Southern Mexico, Central America and Africa. The Mayan Indians believed that poinsettias are powerful creatures from another world while for the Aztecs the poinsettia was a symbol of purity.
According to a Mexican legend a child picked up some weeds from the side of the road as she could not afford a gift for Christ on Christmas. As she entered the church with the weeds, it blossomed into red and green flowers.

Legends about Mistletoe
Thanksgiving is just on day after tomorrow. I think everyone has finished preparations for it. I have completed my invitations and decorations. Actually there is not much to decorate on Thanksgiving day. Just the usual Autumn flowers in a vase and using the Thanksgiving special card holders and mats. There is hardly any myth associated with any flower, tree or shrub on Thanksgiving. Whereas in Christmas, I don't know how many myths and legends are there about different plants. The most famous plant associated with Christmas is perhaps the mistletoe. Hanging of a artificial mistletoe bunch at the door or at the room is a common scene in Christmas.
The most popular custom around this plant is to exchange kiss by a man and a woman that signifies their marriage in the near future and life long happiness. This event can b e traced back to the old Greek Greek festival of Saturnalia and later with primitive marriage rites. In Scandinavia, mistletoe was believed to be the plant of peace under which the enemies made peace and the quarreling couples kissed and made up. In the eighteenth century the English started the custom of creating a mistletoe ball under which a young lady cannot refuse to be kissed. Such kiss would mean deep love and everlasting friendship.
Even before getting associated with Christmas, mistletoe has been considered as a sacred and magical tree by the Greeks and other Europeans. In the medieval age, people used to hang mistletoe on the ceiling with this believe that it would keep away the evil spirits. Even the Europeans used to put it before the doors having such belief. It is quiet clear the association of Mistletoe with Christmas has roots in the Pagan rites and rituals. The mistletoe has number of other legends and folklores, but that is to be discussed later.

As I have promised I am here with some more information on mistletoe.
The plant itself is an interesting plant to the botanist for study. It is an partially parasitic as it grows on branches and trunks of other trees , but it can also make it's own food through photosynthesis. There are two types of mistletoe- while one type is the native of North America and are mainly used for Christmas decorations, the other type is European in origin with looks like green shrub with yellow, white flowers and berries that are said to be poisonous.
The Greeks and the Europeans considered mistletoe, specially those which grew on oak trees as sacred and magical. Most of us perhaps heard about the myths that the Druids in Britain believed. They considered mistletoe to be the miracle plant giving fertility and life to man and animals. After the winter solstice, on the sixth after the new moon, the Druid priest would cut the mistletoe from the oak tree with a golden sickle and would place it on a white cloth. A ceremony followed where two bulls were sacrificed and prayers were said for the well being of the mistletoe receivers.
Then there was the legend among the Viking people about Balder, the god of the summer son. Once Balder had a dream that he would die. His mother , Frigga was panic stricken and asked sky, air, water, animals and plants not to kill her son. But Balder's enemy Loki found that Mistletoe is not a plant as such as it has no root inside the ground. So he made a poisoned dart with the plant and made Balder's blind brother to shoot at Balder. When all the elements failed to bring back life to Balder, Frigga's tears changed the red mistletoe berries to white, restoring life to her son. Frigga then changed the bad reputation of the mistletoe and kissed everyone who worked underneath the mistletoe as a mark of her gratitude.

So 10 days are only left for Christmas! The mood has already set in. On this weekend I am going to try out my hand in making a Christmas cake. I wish my first attempt in baking a cake turns out well. Christmas cake recipe for all
I made the Christmas cake on this weekend. This is the first time that I baked a cake in my lifetime. It was not bad even though I was not too good in beating up the mixture or know the small tips that makes a cake fluffy. Anyway, I am giving you the Christmas cake recipe and if you follow it exactly, it must be a yummy cake for this holidays.
Ingredients
250g plain flour, Grated zest of 1 lemon, Grated zest of 1 orange, 1 teaspoon mixed spice, 100g almonds roughly chopped, 1 teaspoon ground cinnamon, 1 teaspoon ground nutmeg, 4 eggs, beaten, 250g brown sugar, 250 butter, 200ml brandy, 1/2 teaspoon bicarbonate of soda, 1 teaspoon vanilla extract, 100g red cherries, quartered, 100g finely diced candied peel,
250g sultanas, 250g raisins, 250g currants, Pinch of salt
Preparations
All the fruits, almonds, mixed spices, vanilla and lemon are mixed.After the brandy is mixed with it, it has to be covered with plastic wrap and kept for at least 5 hours so that the fruits can absorb the brandy. Best is to leave it overnight. preheat the oven to warm 160°C. Line the base and sides of the tin with buttered baking paper, which should be 2.5cm taller than the side of the tin. Wrap a strip of brown paper around the tin and tie with a string. The sugar and butter are beaten well until light and creamy. Eggs are added one by one, beating well after each addition. Sift together the flour, bicarbonate of soda and salt.The butter mixture is added to the soaked fruits and is stirred until thoroughly combined. put the mixture into cake tin and bake for about 30 mins. Then reduce the heat to 150°C and cook for another 3 hours. Remove from the oven and allow to cool. It is wrapped in a plasitc wrap and should be stored in a cool place overnight before icing. Do the icing as you please.

This is how the birth of Jesus Christ came about: His mother Mary was pledged to be married to Joseph, but before they came together, she was found to be with child through the Holy Spirit. Because Joseph her husband was a righteous man and did not want to expose her to public disgrace, he had in mind to divorce her quietly. But after he had considered this, an angel of the Lord appeared to him in a dream and said, "Joseph son of David, do not be afraid to take Mary home as your wife, because what is conceived in her is from the Holy Spirit. She will give birth to a son, and you are to give him the name Jesus, because he will save his people from their sins." All this took place to fulfill what the Lord had said through the prophet: "The virgin will be with child and will give birth to a son, and they will call him Immanuel"--which means, "God with us." When Joseph woke up, he did what the angel of the Lord had commanded him and took Mary home as his wife. But he had no union with her until she gave birth to a son. And he gave him the name Jesus. Wise Men After Jesus was born in Bethlehem in Judea, during the time of King Herod, Magi from the east came to Jerusalem and asked, "Where is the one who has been born king of the Jews? We saw his star in the east and have come to worship him." When King Herod heard this he was disturbed, and all Jerusalem with him. When he had called together all the people's chief priests and teachers of the law, he asked them where the Christ was to be born. "In Bethlehem in Judea," they replied, "for this is what the prophet has written: "'But you, Bethlehem, in the land of Judah, are by no means least among the rulers of Judah; for out of you will come a ruler who will be the shepherd of my people Israel.'" Then Herod called the Magi secretly and found out from them the exact time the star had appeared. He sent them to Bethlehem and said, "Go and make a careful search for the child. As soon as you find him, report to me, so that I too may go and worship him." After they had heard the king, they went on their way, and the star they had seen in the east went ahead of them until it stopped over the place where the child was. When they saw the star, they were overjoyed. gifts On coming to the house, they saw the child with his mother Mary, and they bowed down and worshiped him. Then they opened their treasures and presented him with gifts of gold and of incense and of myrrh. "Get up," he said, "take the child and his mother and escape to Egypt. Stay there until I tell you, for Herod is going to search for the child to kill him." Fleeing to Egypt So he got up, took the child and his mother during the night and left for Egypt, where he stayed until the death of Herod. And so was fulfilled what the Lord had said through the prophet: "Out of Egypt I called my son." When Herod realized that he had been outwitted by the Magi, he was furious, and he gave orders to kill all the boys in Bethlehem and its vicinity who were two years old and under, in accordance with the time he had learned from the Magi. Then what was said through the prophet Jeremiah was fulfilled: "A voice is heard in Ramah, weeping and great mourning, Rachel weeping for her children and refusing to be comforted, because they are no more." After Herod died, an angel of the Lord appeared in a dream to Joseph in Egypt and said, "Get up, take the child and his mother and go to the land of Israel, for those who were trying to take the child's life are dead." So he got up, took the child and his mother and went to the land of Israel. But when he heard that Archelaus was reigning in Judea in place of his father Herod, he was afraid to go there. Having been warned in a dream, he withdrew to the district of Galilee, and he went and lived in a town called Nazareth. So was fulfilled what was said through the prophets: "He will be called a Nazarene."

Where do you stand with Jesus Christ today?
Being a Christian is an individual thing -- a personal relationship with Jesus Christ. He is alive, and wants to know and be known by you. No "religion" can save you, nor can any denomination or church. Only Jesus has the power to save you and give you eternal life.
In the book of Romans, the apostle Paul writes "That if you confess with your mouth, "Jesus is Lord," and believe in your heart that God raised him from the dead, you will be saved."
We see here three clear ideas:
1- A public confession
2- Jesus is Lord
3- Believe God raised him from the dead
As recorded in the Bible, listen to what happened when the disciple Thomas encountered Jesus after he had been killed and was risen from the dead. Remember, that Thomas wasn't present the first time Jesus came to visit his disciples after his resurrection, and Thomas did not believe that he was alive based on the testimony of the others:
"A week later his disciples were in the house again, and Thomas was with them. Though the doors were locked, Jesus came and stood among them and said, "Peace be with you!" Then he said to Thomas, "Put your finger here; see my hands. Reach out your hand and put it into my side. Stop doubting and believe."
Thomas said to him, "My Lord and my God!"
Then Jesus told him, "Because you have seen me, you have believed; blessed are those who have not seen and yet have believed." Jesus did many other miraculous signs in the presence of his disciples, which are not recorded in this book. But these are written that you may believe that Jesus is the Christ, the Son of God, and that by believing you may have life in his name."
The points are the same:
1- Jesus is physically alive. His body is resurrected. He is alive today, guiding his disciples just as he has always done.
2- Jesus is Thomas' "Lord." We don't use that word very much anymore, but it might be translated as "boss" or "king" or "master." Jesus is the one who tells us what to do, and when to do it. Sort of like the Army. The sergeant tells you where to go, what to wear, when to do everything. Jesus is the "master sergeant" of our lives. Living in us by his Spirit, he wants to direct our lives like that sergeant. Jesus' goal isn’t just to teach us what to do, but how to do it. Everything is to be done by his Spirit. God created human beings to live by his Spirit. He calls this "life." When we were living without his Spirit, he called us "dead."
3- Jesus is God. This is part of making Jesus Lord. Thomas said it outright. "My Lord and my God." All the disciples said it. Jesus clearly claimed it. But it is the hardest teaching in the Bible. The Jews heard Jesus say it, and crucified him for it. Most unbelievers will only say that Jesus is a good man or just a prophet, which is the stumbling block which keeps them from salvation. Why? Because Jesus must be God to be a sacrifice for all creation. Unbelievers ultimately don't want to put aside their own egos and admit they are sinners, admit they are weak, admit that they are helpless and lost without Jesus. The power of life is "Christ in us."
Now, here is another breakdown in faith that keeps some from salvation and receiving the Holy Spirit: They will say that Jesus is God, but only as they see themselves as Gods, too. They believe in a hierarchy of Gods, with themselves among them. The Father is above Jesus, Jesus is above Satan, and Satan is above you and me and everyone else, etc. Can you see the problem? Admitting that Jesus is God doesn't mean anything if you think you're a God, too. "Jesus as Lord" demands that we know that he is the one and only God--otherwise we would be serving multiple "Lords." God is one. Father, Son and Holy Spirit are one. Just like each of us—who are made in God's image--has a body, soul and spirit and still are just one person. This is crucial. You don't have to fully understand heavenly things to understand this one thing--Jesus is your Lord and Master and God.
4- Because Jesus is Lord and Jesus is God, he hears our prayers and will save you if you ask him. We believe this by faith. The Holy Spirit is a "seal" or sign of that faith, and he provides the wisdom and power we need for daily living.
To the point: Can you make Jesus "Lord" without knowing all the answers to every question you might have in heaven and earth? Can you let go of having to "do good works" to make a place for yourself in the hereafter, and instead live moment by moment by the Spirit of Christ? Can you humble yourself as Thomas did, and let Jesus be in charge of everything? If you can do this, Jesus will gladly receive you and begin that personal relationship. You can have confidence that he will do this.
Hear these words from John 10:25-30 in the Bible:
Jesus said, "The miracles I do in my Father's name speak for me, but you do not believe because you are not my sheep. My sheep listen to my voice; I know them, and they follow me. I give them eternal life, and they shall never perish; no one can snatch them out of my hand. My Father, who has given them to me, is greater than all; no one can snatch them out of my Father's hand. I and the Father are one."
